Butter Mochi for Zoji Virtuoso Plus Breadmaker BB-PDC20

Hello, new to the site and new to bread makers. Zoji has a recipe for butter mochi on their website, it is not for my model though and would love to be able to make this. Does anyone have a recipe to make butter mochi in the Virtuoso Plus Breadmaker BB-PDC20?

Hi 

This recipe is what I have used many times but I baked it in an oven.

I think the temp on a Zojirushi will get to 350F.  i am not sure how well it will brown. Getting a golden crust at the top makes is all the more appetizing.

 

  • 1 lb glutinous rice flour, Chinese brand
  • 4 large eggs
  • 3 c milk (nonfat ok)
  • 1.5 – 2.5 c granulated sugar
  • 1 tsp coconut extract
  • 2 – 4 tbsp. butter, melted and cooled
  • 3 tbsp finely shredded coconut

Mix all ingredients together. Beat with a mixer at medium speed for 2 minutes.

Pour into a prepared rectangular pan (sprayed with PAM). Depth of batter is about 1.5 inches. Bake at 350F for about an hour or until cake is golden and its sides pull away from pan. Cool before cutting. 

Want to try brown sweet rice mochi with freshly ground flour? (It does not have butter and is steamed not baked.)

if I swap the milk with coconut milk?

Every year for Chinese New Year, my auntie in NY prepares baked 椰汁年糕. She verbally explained how to make it, but her recipe is so vague that I've never attempted it.

This one is easy and many call it "Chinese NY cake".

It has a very clean rich taste with whole milk (though I often use nonfat) . The coconut floats to the top and the toastiness of it is something I like a lot.  Try it with coconut milk  of course but it could be richer than you want.

 

There are some other 年糕 s , I think but this one is a no fail type and very fragrant and delicious warm.  Its color is very golden and not pale at all.

 

The one made here uses coconut milk.

A 5th grader I knew baked a batch for his class party and it was a hit even with those unfamiliar with it.  (gluten free also).

I have all the ingredients, so I'll give it a shot in the air fryer.

How much of a difference does baking powder make in the cake? Have you ever tried using it?

I have never used BP - the eggs give the rise but the cake does deflate and result in a wonderful "gel".

Be sure to leave room for a 35% rise in the oven.

The recipe above gives a lot of batter. I used a 9.25" square corning rectangular dish. Spray with PAM!!

Hi!

I have both Zojis and they are identical in performance. The only difference it that V. Plus has more programs and looks a bit different. 

I saw on their website that Mochi recipe is for V but not for V+, so maybe their cake course differs somewhat. The solution for that is to create a program for your V+ to imitate the Virtuoso's Cake Course:

It's

24 min kneading (beep after 16 min, which you are supposed to skip anyways when you make Mochi)

70 min baking (you only need 60 min of baking for Mochi according to their recipe)

16 min cool (you don't need that either)

So, create a program for 24 min kneading + 60 min baking and you are all set. Remember to come to your bread machine to sprinkle the top with grated coconut twice as the cake bakes.

those Zojis are identical baking-wise.

You won't get 350ºF from either of them, though. They max out at 294º. That's what I measured, and that's what it says in the manual. So they're honest about it.

Thanks I will try that. Zoji in an email said the pan was also slightly thicker.

I have not tried this yet, but was just going over your suggestions. Seems like it is less time then the default cake setting. Total time is 1:50 for this, if I go by yours it is 1:24, less time seems like it would not make things better for the issue I am having… unless I am misreading something. Zero experience in baking.

Hi!

The default cake settings in Zo V+ range from 1:40 to full 2hrs depending on the desired crust color. 

The default cake setting in Zo Virtuoso is 24 min kneading + 70 min baking = 1:34 which is close to the V+ light crust cake setting. You might skip programming and simply use Zo V+ LIght Crust cake setting for mochi cake. It will work as well. 

Here is the video by Zojirushi Corp about making that butter mochi cake in their earlier bread machine model, before they came up with Virtuoso and V+ models. Here, the machine kneads for 24 min and then bakes for 1hr 36 min.

The total time is 2 full hours! Just like in Zo V+ Dark Crust cake setting. And the bottom crust IS quite dark indeed.  So, if you are wary of the cake coming out underbaked, especially if your room temperature (in your kitchen) is rather low, you might as well test bake your first mochi cake on the Dark Crust setting in your V+.
